I think it depends more on your financial situation than anything- if you've got enough saved up to make it until you finish school or get another primary job, and you're not happy there and have a good plan, then I'd leave.
As for your manager, you can't really complain a whole lot- it seems like he's trying to make himself look good and make the company more profitable by improving the numbers in the shop (keeping salaries as low as possible without everyone leaving, and running in an understaffed condition having the current workers cover the extra work). Thats very common in many different industries and companies right now- their only real slip up is making it so obvious to the employees that they're contemplating leaving.
As for being overdue for a raise- I have friends that are in a similar predicament. The company keeps saying that the down economy means no raises (and more work to cover for laid off employees), but they can't do anything because they weren't financially smart before the economic downturn and can't afford to just up and quit. Thats why I say it really depends on your financial situation.

I don't think it will hurt them that bad. They'll likely just spread the workload as much as possible over the current employees and rush to find someone to replace you if they have the staff spread as thin as you say they are now. In this economy, finding a replacement shouldn't take much time at all. So, you may cause them a little trouble in the short term (the next couple days, maybe week or two), but I don't think you're going to really going to be able to phase them much in the long run.
What kind of plan do you have if you do quit? Going to just do sidework until you finish school, then where will you go work? Will you need thisplace as a reference later on?
